Crispy Chicken Spring Rolls with Scallions & Ginger

Meals don't get much easier or more delicious than this! Be sure to try this on one of those quick meal nights!

Ingredients

  • 1 Pkg SUMM! Chicken Spring Rolls
  • 2 cups brown rice
  • 2 TBSP finely chopped scallions
  • 2 TBSP finely chopped pickled ginger slices
  • 1/2 TSP light soy sauce
  • 1 handful raw snap peas sliced
  • Nori as garnish if desired

Directions

  1. Prepare spring rolls according to package directions.
  2. Combine the chopped scallions, ginger and soy sauce in a small bowl.
  3. Assemble bowls with brown rice, snap peas and spring rolls.
  4. Garnish with scallion ginger mixture and enjoy!
