Korean Spring Roll Chilli Bake

  • 1 Pkg Summ Korean Inspired Pork Spring rolls
  • 2Tbsp. canola oil
  • 1 green pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 2 tsp chili powder
  • 1 tsp salt
  • ½ tsp sugar
  • 1 28 oz can diced tomato
  • 1 Tbsp tomato paste
  • ½ cup water
  • 1 14 oz can kidney beans
  • 2 cup shredded mozzarella
  • Scallions, chopped
  • Cilantro

Cooking Instructions

  • In a medium pot over medium high heat, add the oil, onion and green pepper.
  • Saute until soft and add the garlic, spices, salt and sugar. Stir to combine and add the diced tomato with the juice along with the water and tomato paste.
  • Stir to combine and let simmer for 10 mins.
  • Meanwhile, prepare Summ spring rolls in an air fryer or preheated oven according to package directions and reserve.
  • Add the kidney beans to the pot and continue to simmer for 15 minutes until thickened.
  • Spoon the chili mixture into a medium sized baking dish and arrange the spring rolls over top.
  • Spoon some of the chili mixture on top spring rolls and cover with shredded mozzarella.
  • Bake for 15-20 minutes.
  • Garnish with scallions, cilantro and SUMM! Gochujang sauce.
