Asian Watermelon Salad

Try this summery Asian inspired watermelon salad with our Sriracha Chicken Spring Rolls!

Ingredients

  • 1 pack of SUMM! Sriracha Chicken Spring Rolls
  • 1/2 medium sized watermelon
  • 2 Persian cucumbers
  • 1/3 cup of cubed feta cheese
  • Basil or mint leaves
  • 1 tbsp of sesame oil
  • 2 tbsp neutral oil (canola)
  • 2 tbsp soy sauce
  • 2 tbsp yuzu juice or lime juice

Directions

 

  1. Preheat oven to 375°F (190°C).
  2. Place Spring Rolls on a baking pan in a single layer and heat in the oven for 18 minutes or until crispy, turning once.
  3. While baking, chop your watermelon, cucumbers, feta, and basil.
  4. Mix the oil, soy sauce, yuzu  and toss.
  5. Remove Spring Rolls from oven and let stand for 2 minutes.
  6. Serve with SUMM! Sweet Sriracha sauce.
