Chicken Gyoza Cucumber Salad

Ingredients

  • 1 Pkg SUMM! Chicken Gyoza
  • 4 mini cucumbers, cut into chunks
  • 1/2 cup feta cheese, crumbled
  • 1 small bunch radishes
  • Approximately 1/2 cup vinegar
  • 1/2 cup arugula
  • 2 Tbsp olive oil
  • 2 Tbsp rice wine vinegar
  • 2 tsp honey
  • 1 tsp toasted sesame seeds

Directions

  1. Thinly slice radishes and plant in a small bowl.  Add enough vinegar to cover radishes.  Cover and refrigerate for about 30 minutes.  Once pickled, radishes can be kept in a lidded jar and used in many other dishes.
  2. While radishes are marinating, prepare gyoza according to package directions and reserve.
  3. Arrange cucumbers, arugula, feta, and some pickled radish on a serving plate. Add the reserved gyoza and drizzle with olive oil, rice wine vinegar, and honey.
  4. Garnish with toasted sesame seeds and enjoy!
