Bibimbap with Spring Rolls

INGREDIENTS:

  • SUMM! Beef Bulgogi Spring Rolls
  • 1 pound rib eye or boneless short rib steak, thinly sliced
  • 1/4 pear, grated
  • 1 garlic clove
  • 2 Tbsp soy sauce
  • 1 Tbsp gochugaru or chili flakes
  • 1 Tbsp ginger, peeled and grated
  • 1 Tbsp light brown sugar
  • 1 Tbsp toasted sesame oil
  • 2 Tbsp vegetable oil
  • Salt
  • Sliced green onion (garnish)
  • Steamed short grain rice
  • Grated carrot
  • Bean sprouts
  • Fried egg

DIRECTIONS:

  1. In a large bowl combine the pear, garlic, soy sauce, gochugaru, ginger, sugar and sesame oil. Add the beef and stir to coat. Reserve.
  2. Heat 2 Tbsp vegetable oil in a cast iron skillet on high heat. Sear the steak in small batches, allowing it to caramelize well. Remove from heat and season with salt. Reserve.
  3. Prepare SUMM! Spring rolls according to package directions. Keep warm and reserve.
  4. Assemble your bimimbop bowls with steamed rice, bulgogi meat, green onions, grated carrot, bean sprouts, SUMM! Spring rolls and a fried egg.
  5. Serve with SUMM! Sauce.
  6. Enjoy!
