Ingredients:

  • 1 pkg SUMM! Thai Basil Chicken Spring Rolls
  • 1 cup prepared vermicelli rice noodles
  • ½ cup chopped red cabbage
  • ½ cup chopped red bell pepper onion
  • ¼ cup roasted unsalted peanuts, roughly chopped
  • Fresh Thai Basil leaves
  • Mint
  • Cilantro for garnish
  • Optional – sesame seeds

Directions:

  1. Prepare SUMM! Thai Basil Chicken Spring Rolls according to package directions.
  2. Prepare vermicelli rice noodles according to package directions.
  3. In a bowl, mix hot water with sugar to dissolve. Add fish sauce, vinegar, lime, garlic, carrot, and SUMM! Sweet Chili sauce. Stir to combine.
  4. Plate rice noodles and vegetables in a bowl. Drizzle with sauce and garnish with Thai basil, peanuts, and mint.
  5. Top with SUMM! Thai Basil Spring Rolls.
  6. Enjoy!
