Pad Thai with Thai Basil Chicken Spring Rolls

This Thai-inspired meal will satisfy your hunger and cravings! It's quick and easy to make and will have dinner ready in less than 30 minutes!

Ingredients:

  • 1 package SUMM!  Thai Basil Chicken Spring Rolls
  • 1 package rice stick noodles
  • 1 red pepper, thinly sliced
  • ½ small yellow onion, thinly sliced
  • 20 prawns, shelled and deveined
  • 1 Tbsp canola oil
  • 1 cup bean sprouts
  • ½ cup chopped scallions
  • ¼ cup chopped cilantro
  • ½ cup chopped roasted peanuts
  • 1 lime, quartered

Sauce

  • 3 Tbsp fish sauce
  • 3 Tbsp light brown sugar
  • 3 Tbsp water
  • 2 Tbsp white vinegar
  • 1 Tbsp soy sauce
  • 1-2 tsp garlic chili paste

Directions:

  1. Prepare SUMM! spring rolls according to package directions and keep warm.
  2. Meanwhile, soak rice stick in a large bowl of hot water and reserve.
  3. In a small bowl, mix together all the sauce ingredients and reserve.
  4. Heat a large skillet on medium high heat. Add the oil and sauté the red pepper onion and prawns until vegetables is softened and shrimp is pink.
  5. Next, add the sauce mixture and stir to combine. Drain the rice stick, add the noodles to the skillet and toss to coat with sauce. If needed add a bit more water and cook until noodles are softened.
  6. Serve, garnished generously with scallions, cilantro, peanuts, fresh bean sprouts and a squeeze of lime.
