Ingredients:

  • 1 pkg SUMM! Chicken lumpia
  • 4 cups red cabbage, finely sliced
  • 4 cups green cabbage, finely sliced
  • 2 cups carrot, finely sliced
  • 3 stalks green onion, sliced
  • ½ cup cilantro, roughly chopped
  • 1 tsp salt
  • 2 tbsp honey
  • ¼ cup olive oil
  • 2 tbsp sesame oil
  • 3 tbsp apple cider vinegar
  • 1 cup roasted peanuts or cashews, roughly chopped

Directions:

  1. Prepare SUMM! Chicken Lumpia as directed on the package. Keep warm and reserve.
  2. In a medium bowl, toss together all ingredients. Serve with reserved lumpia.
  3. Enjoy!
