Edamame Veggie Gyoza Bowl

Tired of building the same salad bowl everyday? Try this colorful, nutrient-dense bowl which can be easily packed for that meal on the go or for those days you want an easy lunch!

Ingredients:

  • 1 pkg SUMM! Edamame Gyoza
  • 1 cup baby kale greens
  • 1/2 cup cooked quinoa
  • 1/4 cup cooked beets, cubed
  • 1/4 cup cooked yams, cubed
  • 1/4 cup red cabbage, shredded
  • 4-6 edamame gyoza

Directions:

  1. Cook quinoa per instructions on the package.
  2. While quinoa is cooking, cut cooked beets and yams into 3/4″ cubes
  3. Shred some red cabbage
  4. Pan fry Edamame Gyoza per instructions on the package.
  5. When quinoa is done, assemble your bowl and drizzle with ponzu sauce included in SUMM! Edamame Gyoza package or with your favourite dressing!
