Miso Ginger Yaki Udon

  • SUMM! Shiitake Mushroom Vegetable spring rolls
  • 3 Tbsp. white miso paste
  • 1 Tbsp. soy sauce
  • 2 Tbsp. mirin
  • 1 large clove garlic, minced
  • 1 tsp ginger, minced
  • 2 Tbsp vegetable oil
  • 3 scallions, sliced
  • 1 cup julienned kale
  • 1 Tbsp sesame seeds
  • 1/4 cup sake or dry white wine
  • 2 cups of chicken or tofu, cubed
  • 2 packages precooked udon
  • 1 Tbsp sesame seeds


  1. Prepare SUMM! Spring rolls according to package directions. Keep warm and reserve.
  2. In a small bowl, combine the miso, soy, mirin, garlic, ginger and 1 tbsp of the oil. Use half of this paste and combine with the cut chicken.
  3. In a large bowl, place the udon and pour over some boiled water to help loosen the bundles. Drain and reserve.
  4. Heat a large skillet over medium high heat and add the remaining oil. Saute the chicken until nicely browned. Add the sake and stir the pan.
  5. Next add the remaining miso mixture, udon, kale and scallions. Toss to combine. Garnish with extra scallions and sesame seeds.
  6. Enjoy!
