Thai Mango Salad with Thai Basil Chicken Spring Rolls

Satisfy your taste buds with this flavourful and fresh Thai Mango Salad served with SUMM! Thai Basil Chicken Spring Rolls. With juicy mango and pops of sweet chili heat, this is a matchmaker for your spring rolls!

Ingredients

  • 1 Pkg SUMM! Thai Basil Chicken Spring Roll
  • 1 Mango (Tommy Atkins Varietal)
  • 2 Baby Cucumbers
  • ½ Red Bell Pepper
  • ¼ Red Onion
  • 1 tbsp chopped cilantro
  • 2 large sprigs of Thai Basil

For the dressing:

  • Included SUMM! Sweet Chili Sauce
  • Half a squeezed lime
  • 2 tsp fish sauce
  • 1 garlic clove

Directions

  1. Air fry or bake the SUMM! Thai Basil Chicken Spring Rolls according to the package instructions until golden and crispy. Set aside to cool slightly while you prepare the salad.
  2. Peel and slice all the fruit and vegetables into thin julienned strips. Roughly chop the cilantro and thinly slice the basil.
  3. In a large bowl, combine the mango, cucumbers, red bell pepper, red onion, cilantro, and basil.
  4. In a separate bowl, combine the SUMM! Sweet Chili Sauce, lime juice, fish sauce, and garlic for the dressing.
  5. Toss everything together in a large bowl until evenly mixed.
  6. Serve alongside  your Crispy Thai Basil Chicken Spring Rolls
