Spring Rolls with Pineapple Mint and Pickled Onions

Try something different by adding this refreshing pineapple mint with pickled onions to add some colour to your plate! Bring some excitement to your plate!

Ingredients

  • 1 pkg SUMM! Chicken Spring Rolls
  • 1 cup pineapple chunks
  • 1/2 cup fresh mint, chopped
  • 1/2 cup red onion, sliced
  • 3 tbsp apple cider vinegar
  • Lime wedges

Directions

  1. Prepare SUMM! Vegetable Spring Rolls according to package directions.
  2. Place red onion in a small bowl and toss with apple cider vinegar. Let marinade for about 30 minutes or until red onion turns pink.
  3. Serve warm spring rolls garnished with pineapple, mint, red onion, and a squeeze of lime.
