Coconut Red Curry Soup

Soup season calls for something cozy with a kick. Our coconut red curry soup is creamy, comforting, and just the right amount of spicy—perfect for pairing with SUMM! dumplings on a chilly day.

Ingredients

  • 1 pack of SUMM! Vegetable Gyoza Dumplings
  • 1 generous tsp of red curry paste
  • 1 garlic clove
  • 1/2 tsp of minced ginger
  • 1/4 cup of coconut milk
  • 1 cups of chicken or vegetable broth
  • 2 tsp fish sauce
  • 1/2 tsp of sugar
  • 4 mushrooms
  • 1 medium sized tomato
  • 1/2 cup bean sprouts
  • wedge of lime
  • green onions or cilantro for garnish

Directions

 

  1. Sweat the garlic, ginger, and red curry paste in neutral oil over medium heat.
  2. Add in broth, coconut milk, fish sauce, sugar and bring to a boil.
  3. Add in the mushrooms and tomatoes.
  4. Once boiling, add in the dumplings and heat for 5 minutes until fully heated through.
  5. Top with fresh bean sprouts, a wedge of lime, and garnish with cilantro or green onion.
